This is where it all began. Inspired by the classic style of Belizean habanero sauce, the original Flying Scotsman blends red and orange habaneros with traditional Caribbean flavors- carrot, onion and lime juice, along with a couple of secret ingredients for good measure and outstanding taste. A medium-hot sauce (6 to 6.5 on a scale of 1-10) that stands on its own as a condiment (we put it on everything around our house), but makes a great addition to everything from scrambled eggs to tortilla soup to pasta al diavolo.
Fans of "This Is Spinal Tap" will remember Nigel Tufnel's amplifier with the knobs that "go up to 11"; this sauce, incorporating the Naga Jolokia or ghost chile and a homemade vindaloo spice blend, is our tribute to going over the top, just because you can. Searing heat combined with complex Indian spice flavors- it'll melt your face off and you'll thank it for doing so. Heat rating - we don't call it #11 for nothing.
A fruity take on the original recipe. This variety blends mango and papaya into a carrot and onion base, replaces the red habaneros with large, potent chocolates, and ditches the vinegar in favor of an all-fruit-juice base for a naturally sweet (no sugar added!), powerfully hot concoction. We use it a lot at home mixed with yogurt or mayonnaise for a spicy dip, and its bright citrus flavor makes it a natural addition to fish and poultry marinades. Heat Rating: a good bit hotter than the Original Recipe, clocking in at a 7-8 on a scale of 1-10.
Our favorite mistake, this sauce came about when a supplier sent us jalapeno seeds, mislabeled as white habanero. So what do you do with unintended jalapenos? Smoke them and make chipotles, of course! Blending smoked ripe jalapenos with traditional barbecue elements like tomato, brown sugar and vinegar, Smokestack nicely complements anything grilled, especially over charcoal. Add a few tablespoons to chili or beef stew for a kick that's not overpowering. Heat Rating: About a 4.5 on a 1-10 scale.
